CHILLI SALMON, CARROT, KALE & BUCKWHEAT
Buckwheat is actually not wheat at all, so don’t be fooled. It is, in fact, a nutrient-rich, gluten-free seed that is high in protein and fibre, and when combined with the chilli salmon in this salad makes for a really satisfying dish.
500g (1lb 2oz) salmon fillet
3 tbsp sweet chilli sauce
150g (5½oz/scant 1 cup) buckwheat
1 tbsp olive oil
1 red onion, sliced
3 garlic cloves, finely grated (minced)
3 thyme sprigs
300g (10½oz) baby carrots, washed, large ones cut in half lengthways
400g (14oz) kale, tough stalks removed
juice of 2 oranges
sea salt and freshly ground black pepper
